 Easy Slow Cooker Beef Stew

Serves: 4

Ingredients:

  • 1 lb beef stew meat, cut into bite size pieces
  • 3 large carrots, cut into chunks
  • 1 onion, quartered
  • 6 cloves garlic (left whole)
  • 1 tablespoon fresh thyme
  • Salt and pepper to taste
  • 1 can Rotel crushed tomatoes (or any other kind, crushed)
  • 1 can low sodium beef broth
  • 1 package fresh mushrooms (quartered)
  • 1 package small tiny potatoes, left whole
  • Flour for dredging +peas – Optional

Directions:

Spray the slow cooker with olive oil. Add the sliced onions, carrots, and potatoes.

Dredge the stew meat in the flour and add to the slow cooker over the onions, carrots and potatoes. Sprinkle with thyme. Add the crushed tomatoes and mix. Add the beef broth and mix again.

Cook on low 6-8 hours. In the last hour, add the peas if using.

Serve with crusty bread.
