Slow Cooker Skirt Steak in a Rub

Serves: 2-4
Ingredients:
- 2 pounds skirt steak
- 1-½ teaspoon salt
- ½ teaspoon pepper
- 1 lime, juiced
- 2 teaspoons cumin
- 1 teaspoon paprika
- 10 cloves garlic, minced
- 2 teaspoons oregano
- ¼ cup fresh cilantro, roughly chopped
Directions:
Cut skirt steak in half or thirds to fit in slow cooker. Season with salt and pepper. Set aside.
In a small bowl, combine lime juice, cumin, paprika, garlic and oregano. Rub all over the skirt steak.
Place the steak into a 6 quart slow cooker. Sprinkle the cilantro on top.
Cover and cook on low for 4 hours.
Remove pot from base and partially open lid. Let rest for 10 minutes. Slice.
I served this with a salad and a mixture of rice and pasta in a creamy cheese sauce with broccoli and a salad. You can also serve this with tortillas.
