Old Bay Seasoning Shrimp, Tomatoes and More

Ingredients:
- 14 large shrimp, deveined
- 1 tablespoon old bay seasoning
- 1 lemon, zested and sliced
- 2 tablespoon olive oil
- 2 tablespoons butter
- 3-4 pieces garlic, sliced thin
- 4-6 black and green olives, sliced
- Handful of grape tomatoes, sliced in half
- 2 scallions, chopped, for garnish
- Handful of grated parmesan Reggiano
Directions:
Sprinkle shrimp with Old Bay Seasoning. Add lemon zest and sliced lemon to the shrimp. Add garlic and a splash of sherry. Toss and cover and let sit for at least half an hour.
Cook pasta according to box directions.
Heat two tablespoons olive oil and butter then add the garlic and stir until fragrant. Add the shrimp, turning until almost pink. Add the tomatoes, sprinkle a little salt. Continue tossing. Let the tomatoes simmer for a few minutes. Sprinkle some parmesan on shrimp and tomatoes and mix thoroughly.
Drain the pasta and add to the pan. Toss until coated.
Plate and add sprinkle on the scallions.
