Sweet Potato Latkes

Makes approximately 24 small latkes.
Ingredients:
- 2-3 very large sweet potatoes (about a pound), peeled
- 1 large onion, quartered
- ¾ cups all-purpose flour
- 3 large eggs
- 3 teaspoons kosher salt
- 1-1/2 teaspoons baking powder
- ½ teaspoon ground pepper
- 1 cup of vegetable oil
Directions:
Coarsely shred potatoes and onions together. I used a food processor but you can use a box grater. Transfer mixture to a clean dish towel and squeeze and wring out as much of the liquid as possible.
Combine potatoes and onions with the flour, eggs, salt, baking powder and pepper and toss with a fork until well combined.
Pour a cup of oil in a pan and heat until sizzling. (You can test this with a sprinkle of water using your finger) With a fork, scoop 12 small latkes into the pan and flatten a little. Let cook on medium high heat until brown (approximately 6-8 minutes) check before flipping to see that they are brown) and cook another 6-8 minutes until done.
Transfer to a cooking rack lined with paper towels or paper bags to drain the oil.
Serve with applesauce, sour cream or Greek yogurt, and some smoked salmon.
